Animal Derived Food Quality and Safety

The increased consumption of animal products (farmed and managed) and demand for animal production, food processing conditions, and animal product quality have raised concerns about animal welfare, transport, and slaughter conditions. This section explores the effects of farming practices on animal products, including intrinsic and extrinsic dimensions of quality, and quality construction. This framework enables evaluation of quality dimension prioritisation, as well as antagonisms and synergies of quality dimensions, thus helping to ensure both productivity and sustainability of livestock production systems. Multidimensional research concerning the impact of livestock production systems on animal products is also considered, as well as the impacts of animal products on food security and the effects of their consumption on human and environmental health.
