As the leading journal in its discipline, the Journal of the American Society of Brewing Chemists (JASBC) aims to bridge the gap between fundamental and applied research in the fields of brewing, distilling, fermentation, and other closely interrelated disciplines.  JASBC publishes high-quality, peer-reviewed research articles, review articles, research letters, and notes detailing the latest technological and scientific advancements from industry and academia.

JASBC publishes research on beer, distilled spirits, fermented beverages, their raw materials, process aids, and byproducts. Topics of interest include, but are not limited to:

  • chemistry relating to all major and minor components
  • microbiology, biochemistry, and fermentation
  • new, novel, or improved methods used in evaluation and analysis
  • physical/chemical composition, product stability, quality, and food safety
  • advances in sensorial evaluation and consumer perception
  • emerging technology and process improvements
  • sustainability
Please note, papers on therapeutic/clinical applications, those that employ non-human experimental trials, or those pertaining to enology/viticulture will not be considered for publication.

JASBC is an international, peer-reviewed journal publishing high-quality, original research contributions in the pursuit of scientific knowledge. All submitted manuscripts are subject to initial appraisal by the Editor-in-Chief, and, if found suitable for further consideration, to single-anonymized peer review by independent, anonymous expert referees.
